Walnut Cake This recipe is a slightly modified version of the coffee cake recipe that came in the user's manual of my Sunbeam bread machine. Ingredients for dough: 1/4 cup sugar 1 tsp salt 2-1/4 cups bread flour 2 tsp active dry yeast 1 egg yolk 3/4 to 7/8 cup milk 1 Tbsp. butter or margarine Ingredients for filling: 1/2 cup chopped walnuts or pecans 1/2 cup sugar 1 tbsp butter, melted 1 tsp ground cinnamon 1/4 tsp ground nutmeg 1/4 tsp ground allspice or cloves For the filling, just mix the ingredients. For the dough, put all ingredients in a bread machine and run the dough program. If you don't have a bread machine, mix ingredients together, knead for 15-20 min, then cover the dough with a kitchen towel and let it rise in a warm place for about 20 min, or until it doubles in size, punch it down, let it rise again until it doubles in size. The second rising may take longer than the first. Brush a baking sheet with a little cooking oil. Flatten the dough with a rolling pin into an oval shape about the length of your baking sheet and about 8-10 inches wide. Fill with the filling, then fold it up like a letter for a business envelope. Seal the ends. Let it rise in a warm place covered with a kitchen towel for about half an hour. Brush the top with some egg white, sprinkle some sugar on it, then bake it in the oven at 375 F for 20-25 min.
